Healthy Living: Prepping veggies ahead of time

Do you ever wish eating healthy was easier? That you could find something good for you as quick and easy as you could find something full of fats, sugars, preservatives, additives and other not-so-good for you stuff?

Yeah, me too. BUT!, I have found a way to make sure I eat more veggies and it’s super simple. All you have to do is…….prep them as soon as you come home from the store, so that they’re ready to grab off the shelf and eat. I know…brilliant.

We do carrots in sticks, celery in sticks,

broccoli and cauliflower in florets,

radishes, peppers, and cucumbers in slices.

I like to put a paper towel in the bags to absorb any moisture so it doesn’t sit on the produce and make it yucky.

And then there’s lettuce. When I started shopping once a month, I wondered how I was going to survive with only going to the store once a month. I mean, I NEED my lettuce! But I actually found the GREATEST method of keeping lettuce for a long time.

A Food Saver! Do you have one? My mom gave us one for Christmas a few years ago and I love it. I bought a mason jar attachment for it a while back thinking it was a pretty nifty do-dad, but it’s become essential.

I wash and spin dry my lettuce,

then lightly pack it into 1/2 gallon mason jars.

I then place a canning lid and the attachment on the top and use the “canister” setting to suck all the air out and seal the jar.

The lettuce stays good for 3-4 weeks, I kid you not. So if I do 4 jars, I can use one a week for salads, which is fantastic.
