Preparedness: Feeling Challenged

Hi friends
it’s me…..
I know you haven’t seen me in a while.

I have this horrible habit of just dropping non-essentials whenever I am drowning in my everyday. For example…..


the wedding last month…..aren’t they gorgeous? I’m going to have the cutestest (I’m leaving this blatant non-word as a testament to how tired I am) grandbabies.


or the canning I’ve been doing 16 out of the last 23 days (….26 quarts tomatoes, 36 quarts of peach slices, 4 pints of peach slices, 11 pints of spiced honey peaches (yes, I still have peaches to do), 4 pints low-sugar raspberry peach jam, 2 pints regular raspberry peach jam, 5 pints blueberry peach jam, 5 pints peach jam, 10 pintslow-sugar pineapple peach jam, 10 pints plum jam, 17 pints pineapple zucchini, 14 quarts applesauce, 7 pints salsa verde….ok, that’s all I can remember right now, but you get the picture. (hehe, no pun intended…or maybe I did intend…oh, I don’t know.)


I’m going to try and do better, and even if I can’t post something inspiring or noteworthy, I promise to try and just say hello on a regular basis.

Which brings me to my post today, which is definitely noteworthy.

I’m participating in a fun challenge over at Food Storage Made Easy.
I initially signed up just to follow it and see what it was all about, but when I woke up this morning and saw the first day’s challenge I thought, “hey, I just might be able to do this….after I get my canning done for the day.”

And so here I am….exhausted…having canned 11 hours today, and so it won’t be pretty, and it won’t be thrilling (and yes, I know most of them are pretty much blurry, but I don’t have the energy to redo them and I’m hitting the sack the minute I hit “post” so I apologize…oh, and did I mention that 3 of the 6 kids still at home have the stomach flu?), but I’m just going to throw my pics in there and show the “ready to cook” meals I’ve got ready for my fam for the next 7 days.


For breakfast people can eat 7 grain cereal (mix pictured), Oatmeal Pancakes (mix pictured) or Cranberry Almond Cereal (mix pictured)

Lunches are peanut butter and jelly or cheese and crackers…imaginative, I know….

And dinners…..


Tomato Basil with Roasted Garlic Sauce and whole wheat pasta……



Chicken Salad with Thrive Chopped Chicken, Thrive Freeze Dried Onion, and Thrive Freeze Dried Celery….this is good stuff folks! Even my hubby likes it…now you KNOW it’s good!



Cream of Chicken Soup with my Cream of Anything Soup Mix, Thrive Chopped Chicken and some Chicken Bouillon….



Home canned chicken and veggie soup….



Pancakes….cause it’s always good to have a BFD (breakfast for dinner) night!


And bean and cheese burritos with home canned black beans (we’re out of pintos, but black do in a pinch) my tortilla mix, and some cheese. The kids could live on this stuff forever….

  1. nope. don’t even feel the tiniest bit guilty about giving you all those peaches — which created days and days and days of canning work for you!! what awesome food/kitchen creativeness skills you have 😀

    hope you get a well deserved break before the grapes are ready to harvest, hahahaha!! 😉


    1. Break is a relative term, Becky, LOL… I’m about to pull my second batch of quarts of pinto beans out of the pressure canner. But it’s all good. I really appreciated the peaches and I’ll love the grapes 🙂
